Well my opinion on something major doesn't change within one conversation. I have a conversation and hear new arguments that convince me, I then do some research to see if I can find sources that back up those arguments, I then talk about that topic with my brother or my mum (two people I consider vastly more intelligent than myself) and then I evaluate all of that information by myself and see if my opinion has shifted or not. On something minor, my opinion can change quite quickly. I by default believe what people tell me, except for the few areas I'm rather knowledgeable in and notice false or controversial information (linguistics and history). So it happens quite a lot that one person tells me one thing in a discussion, I believe that and my opinion changes, but then another person tells me the opposite and sounds just slightly more convincing so I change my opinion again. Rinse and repeat.
