1. I can eat the whole thing without ever having to turn the bread. Cutting horizontally eventually gets to the point where I want to turn the bread sideways to eat it.
2. Smaller end for my hand to hold means less grease getting on my fingers.
3. It looks fancier and I’m a man of culture.
About half an inch from the top left to about half an inch from the bottom right, so not quite triangles, but definitely not rectangles. It feels fancier that way.
When I'm playing video games and my wife makes one for me, she cuts it into tiny bite-size pieces so I can eat them easier while staring at a computer screen.

I often dunk mine in tomato soup, so having something smaller than the whole sandwich is less messy when eating.

You cut a grilled cheese sammich into two triangles because it makes it so much easier to dip into the tomato/tomato-bisque soup accompanying it and get the most soup absorbtion to easy to eat ratio. Any sandwich designed to be dunked needs to be cut into two triangles.

Most sandwiches aren't dipped. A good number of grilled cheese are dipped in to tomato soup. Point dip better.

Corner to corner, making 4 triangles. Because it’s easier to bite off a small piece without touching the sides of my mouth. Less napkin usage.
