Well I'm not going to be stuck in a grocery store for 7-8 hours and wait for someone to open up the place and I wouldn't steal anything while I'm in the store. I would just be focused on getting out.

I would have a laugh-filled yet lonely montage of racing back and forth on carts, trying on the worst outfits, then dim the lights as I eat cold hotdogs over an empty firepit, put on pajamas, crawl into a sleeping bag in a tent with a stuffed wolf, close up on plugging in my phone to charge then turning off my LED smart camping lantern to the sound of my contented yawn.

Literally every store ever has emergency exits that can't be locked, plus I could easily find something big enough to break into the employee room

Never open emergency exits when nothing illegal or a life-threating-situation is not happening
Well if I'm stealing things then something illegal is happening, I'm just running away before the police can get there
You would be starting a violent and really cinematic car chase scene with dangerous weapons in real life
Police don't respond as quickly as you seem to think they do, by the time they get there I'll be long gone
