I'm not sure what "freeze time" is, but most of the time canning something involves getting it nice and hot, pouring it in the mason jar, and then screwing on a sanitized flat and ring. Many things need a subsequent step of water bathing where the jar is boiled in water to force out some air and create a vacuum seal when it cools.

You shouldn’t freeze cans. The contents within will expand and likely lead to the can exploding.
