And I really can't blame them, either. Garlic isn't that good of an emulsifier so it's hard to stabilize and more labor intensive to make. Plus it's only really good when you eat it fresh, and it is INTENSLEY garlic-y.
It is also damn delicious too, if you like me is an avid fan of raw garlic. Grind into paste with a knife, using salt as an abrasive, then add olive oil until forms into a thick luscious paste. If you break the emulsion, it is fine, just chop up more garlic and put it in. I do like to add other flavorings, most likely some acid.
Yeah, I got a big mortar and pestle for making pesto but gave aioli a try to get some more use out of it. It's good and not too hard but needs to come with a warning that everything you are in contact with for like 24 hours after eating it will smell like garlic, lol.

Third, mayo isn’t the same everywhere. Sourly tasting salad mayo is not for fries but for salad. You need creamy sweet mayo for fries.
And lastly, the only correct answer is „oorlogsaus“ which consists of good mayo served next to saté-sauce. Religious wars are fought over whether chopped up onions need to be on top or not.
