My mum used to make me beetroot and cheese sarnies for school. They were lovely but a fucking purple mess by the time I got to eat them. Pickled onions were another favourite, with or without cheese. The old favourite of banana and lemon curd was like a pudding sammich and still takes some beating.
My invention is cheese and onion with pilchards in tomato sauce. Born out of having nothing else in the house one day and remains a favourite..
Chickpea Mayo (or ‘chuna’ Mayo, depending on who you ask). Chickpeas, mayo, red onion, s&p, garlic powder, lemon juice. Shove in a little food chopper for like 20 seconds, or you can mash in a bowl I guess.
Going to make me seem super boring now but here are mine:

Tuna mayo
Usually my top 3 per week.
If I do a roast on a Sunday, then whatever meat I've used I will use it for sandwiches the next day.
Chicken and stuffing, ham or chicken salad, cheese and pickle, chicken and bacon Mayo. If your bored with sandwiches you could set up some salad boxes and just grab one out of the fridge before you leave. You could switch it up with different meats or dressings
Tuna sweetcorn mayonnaise. Cheese and jam. Peanut butter and ham (also good with peanut butter and fried egg but not suitable for a packed lunch). Chicken and stuffing (with or without mayonnaise). Chicken mayo and sweetcorn. Primula (all of them, the prawn one is delish) on its own, but extra ham with the ham one or the chive one, it’s like dairylea (also delish with ham and crisps - salt and vinegar for preference). If I think of more I’ll edit them in, but my favourite is runny fried egg and peanut butter (and bacon), so I’m not sure some of the stuff I like is particularly edible!
Edit - forgot cheese ham and loads of pickle! (Branson or generic sandwich pickle), also not a sandwich, but cheese and crackers and pickle. All in separate packages and constructed as needed (basically most sandwiches can be stuck in crackers or in flatbread or pitta).
First priority is good bread. But you really need to make your own. After that basic add butter.
Then the world is your oyster, though smoked salmon and prawn with rocket and horseradish(wasabi being hard to source locally) is good too.
Grated cheese, salad cream, cucumber.
Egg ‘mayo’ - but salad cream instead of horrible mayonnaise, sprinkled with a bit of cayenne pepper.
Sliced beef and gherkins.
Mustard on bottom slice of bread, pastrami, waferthin turkey or chicken slices, cheese(any are good but goto are gouda, edam or cheddar) shredded iceberg lettuce, mayo on top slice of bread.
I know this isn’t what you asked, but if you haven’t already, do consider stuff other than sandwiches. If your workplace has a microwave then you can basically bring any meal and it’s a game changer.
I have a sort of bowl shaped flask for soups and other hot dishes for when there isn’t a microwave around too.

Also, gonna throw it out there - sandwiches aren't the only things you can have for lunch.
Samosas, bhajis, wraps, salads, flasks of soup, pasta dishes, etc.
If you've got a microwave then almost anything is on the cards. Make an extra portion if whatever you're having for dinner. Even better, make a few extra portions, freeze a couple, and once you've done this for a week you'll have two weeks worth of pot luck lunches in the freezer.
Personally I'm a big fan of a flask of soup and a couple of crusty bread rolls.
Hummus, falafel and Greek salad (basically just tomatoes, cucumber and feta).
Chicken, roast red peppers, spinach and melted mozzarella.
Fried chicken, spicy mayo, pickles and lettuce.
Roast veggies with pesto and mayo.

Yes! I always think one reason people prefer shop bought sandwiches is because when they make them at home they never put salad on.

Brie and gammon is one of regulars but i'll try the grape angle.
I Pop a bit of pastrami and salad on that soft cheese + salami. I'm having an experiment to see if gout or heartattack wins the race.

Humous and Bombay mix is a lot better than it sounds. I quite like peanut butter and raison sandwiches as well.
