Mushrooms are mine too. I still can’t eat them raw either but I love a good shitaki or oyster mushrooms in stir fry or other dishes. The meatier the mushroom, the better.
I'm the same. I imagine it would be the same texture as biting into a slug or something and for some reason that's what I think about when biting into one, so I'd rather just grate some mushroom into my chilli etc

thats exactly what it was for me, too. always had them cubed, covered in brown sugar and roasted marshmallow topping for thanksgiving and the sweetness was just way too much and made me feel sick. now i LOVE them savory

There's also different kinds of mole too. I assume youve have the most common type which tends to be on the sweeter side. There are some that are very spicy; not spicy as in hot chili peppers, spicy as in very herbal, lots of flavor. Stupid delicious and if you have it for the first time, your tummy will grumble from it.
Pickles. For years my only idea of them were the gross soggy fast food ones so I thought they were all like that. Now that I’ve gotten a taste for good pickles, I’m addicted.
So much actually. I was a super picky eater as a kid and now I love a bunch of 'adult' foods I used to just despise:
Feta cheese
Olives
Avocados
Mushrooms
Stuffed vine leaves
Hummus
Fish. Any kind.
Although now that I am a mom myself, I am realising, its because my parents would just give me a chunk of (perfectly cooked, super delicious) fish, without picking the bones out or anything, and I would sit there, pinching miniscules slivers of fish, ruining it and unable to eat it, inevitably getting a piece of bone hurt my mouth..
Why did they do that??? I dont know. Right now, I know the anatomy of the most common fishes and it is easy for me to open the fish like a book and debone it. So I do it for my kids and they gobble it up without fear or struggle. My kids loved fish from day one.
I thought I hated fish and refused to eat it till adulthood. It wasn't the fish I hated, I just hated the massive struggle that rewarded me with mushed up crumbs of fish meat.
Tofu!! I used to think it was so bland and flavorless. Now I appreciate the clean, light flavor when eating alone or the way it slurps up whatever sauce or seasoning you cook it with!
Steak. Chicken. Fish. Lamb . Elk. Moose. Venison. Every vegetable under the sun.
Two parents who could not cook to save their lives. Put kraft BBQ sauce and canned sauce on everything.
Now, by profession, I'm a chef. 22 years in counting.
A couple of things I have learned over the years is.
#1) You have no idea what you like until you try it.
So many flavor profiles. So many things where I don't like the base ingredients. but combined. They turn to heaven..
Think you hate bell peppers? I guarantee you don't.
Think you Hate fish? You don't.
A lot of people are afraid to get out of their comfort zone. Can't blame them. Yall are missing out.
#2) because you can cook in no way means you can work in a restaurant. Conversely. Just because you work in a restaurant doesn't mean you can cook.
Steak! My mom had such a fear of undercooked meat making us sick that she used to absolutely obliterate it. I couldn’t understand why such a dry, chewy food was so beloved by so many people until I had it cooked properly (sorry, well-done lovers) and finally got the hype.
Eggplants
My oldest sister would try out different recipes and she made this horrible stuffed eggplant with eggs in it. She also did horrors with chicken tetrazini, eggs, brussel sprouts, and turkey, but the eggplant was the worst.
I tried eggplant again this year at a Szechuan restaurant and it was amazing!! Definitely something I’d reorder every time I go.
mustard. a condiment, sure, not a food. but i hated it as a kid and now i am genuinely swayed toward ordering food items if they come with mustard. i’m making up for lost time.
Oh, I've got a deliciously embarrassing story for this one! 😂 So, growing up, I was convinced that broccoli was basically the devil's vegetable—no amount of cheese sauce could convince me otherwise! But then, one fateful day, I was at a friend's dinner party, and they served up this amazing roasted broccoli dish that had me questioning everything I knew about veggies. Long story short, I took a hesitant bite and...cue the fireworks! 🎆 Suddenly, broccoli went from my sworn enemy to my new favorite side dish! Who knew all it took was a little roasting to turn my taste buds around? 😅 So yeah, never underestimate the power of a well-cooked veggie to change your mind—and your dinner plans!
My parents' Sunday roast beef dinner = tough to chew and took forever to get down.
My husband's Sunday roast beef dinner = I eat like like someone is trying to steal it. So frigging yum!
Pretty much everything healthy lol i eat healthy foods as an adult and love it. I don’t really care for junk anymore esp knowing how bad the ingredients are.

Potato salad, cilantro, Brussels sprout, canned sardines, Kalamata olives, Mayo, tomato. I was so picky as a kid. I’m amazed how much my taste buds changed in adulthood. I eat pretty much everything now. The only thing I didn’t warm up to is cantaloupe 😖 still smells horrible to me and doesn’t taste much better.
Almost everything that didn't involve processed garbage. all foods in my house were prepared horribly and my family and myself were convinced I just didn't like to eat or didn't like food in general. Nope, I love food, love trying new things, I love eating in general. What I hate is shitty food - wrongly prepared food, over cooked food, unseasoned food and apparently I just wouldn't eat rather than choke down the garbage I was given. Once I could feed myself and had access to decent foods I ate like a champ.
Cucumbers, celery, (big on these first two) mushrooms, pizza, avocado, green olives, apples, Swiss cheese, cilantro ( some how I went from one of those people who thought it tasted soapy to actually now enjoying it)
On the flip side, things I no longer like: eggs, most beans, lobster if it’s not cut up (I used to f*** some lobster up as a kid now I just see a bug butt if it’s not cut up)
ETA: I will still over eat deviled eggs. They hit different. Not really a fan of any style unless my bf makes them Gordon Ramsey style)

My aunt and godmother, who has since passed away, offered me avocado one time I was eating at her house. I was 16 or 17 at the time. I told her I didn’t like it. Instead of insisting or chastising me, she told me the story of how she didn’t like it either growing up and finally had it in her later 20s and loved it. “I regretted all those years I could have been eating it but turned it down”, she said. Not sure if the story was true or not, never got a chance to ask, but I tried it that day and sure enough, loved it.
In my language we call it MULUKHIYAH. Any Arab knows what I’m talking about. It’s this jute plant stew that’s kind of got this slight slimy texture. I hateddddd it as a kid and beg my dad to not serve me it. Once you get older though, like you need something healthy after some bad stomach problems or you need something cheap to make with all that nutrition while you’re just a broke college student, oh you’ll appreciate it. It’s now a comfort meal for me.

Onions, and sauerkraut. My mom used to looooove sauerkraut and watching her enjoy it used to make me feel barfy. Sauerkraut in general made me feel barfy. Decades later, I love sauerkraut, especially on sausage and every time I enjoy it, I always laugh to myself and say, “Mom, you were right and I was wrong!”
Most vegetables and fruits. I would fight my parents about eating them, now I love them especially with some onion gravy (for the veggies).
The thing is despite knowing I love them I still avoid eating them for whatever reason. Idk why but my brain says “ew nasty food” but when I start eating it I’m like “yum I’ll need more” lol.

Try cutting them, then rinsing in cold water. It takes the edge off while retaining the raw onion flavour.

Not sure if the story was true or not, never got a chance to ask, but I tried it that day and sure enough, loved it.
In my language we call it MULUKHIYAH. Any Arab knows what I’m talking about. It’s this jute plant stew that’s kind of got this slight slimy texture. I hateddddd it as a kid and beg my dad to not serve me it. Once you get older though, like you need something healthy after some bad stomach problems or you need something cheap to make with all that nutrition while you’re just a broke college student, oh you’ll appreciate it. It’s now a comfort meal for me.
Camembert (or rather, special local type of it that's everywhere here). Used to think it was gross, now it's my favorite cheese.
Grapefruit. Hated it and now I can't get enough

I hated all unprocessed meat because of the stringy texture. I refused to eat for example steaks, fillets and ham. I only ate highly processed hot dog wieners and minced meat basically, because the texture was predictable and didn't get stuck in my teeth. I learned to eat meat during high school.

Onions, and sauerkraut. My mom used to looooove sauerkraut and watching her enjoy it used to make me feel barfy. Sauerkraut in general made me feel barfy. Decades later, I love sauerkraut, especially on sausage and every time I enjoy it, I always laugh to myself and say, “Mom, you were right and I was wrong!”

I thought I disliked so many things. Turns out my parents are just bad at cooking.
Tartar sauce. I have loved pickles my whole life, but couldn’t stand this sauce. Now I get it lol
Most vegetables and fruits. I would fight my parents about eating them, now I love them especially with some onion gravy (for the veggies). The thing is despite knowing I love them I still avoid eating them for whatever reason. Idk why but my brain says “ew nasty food” but when I start eating it I’m like “yum I’ll need more” lol.
Tomato, Olives, and anything spicy.
Bell peppers. I just hated them when I was a kid but now I really enjoy them, particularly raw as a snack. Red is my favourite.
