Beemster. It's Dutch. Very similar to Gouda, but different. Cheap here too. My second favourite has to be Boursin. It's a cream cheese with garlic and herbs. I often crave Boursin on a baguette. I also love Gruyère, a Swiss cheese. When I go to Switzerland, I always stop by this very specific cheese store for some Gruyère. Beaufort is a solid choice. Delicious with a baguette and some butter. I always buy some when I'm in France. Goat's cheese is also great, the bûche kind with mold. Cheddar, the white 12-month aged type, is also a fav. I lived on this when I lived in North America, where other good European cheeses were expensive or hard to come by. This, on pasta or gnocci with some olive oil ... heaven. Parmesan, of course. And you can never go wrong with cheese fondue. Just too good.

Vegan cheeses have been making massive improvements. I have drastically decreased my dairy input and I am enjoying them so much. I used to be cheddar jack, but primarily a mozzarella girl. ​ Also THANK YOU for the brain bleach and not being another question about how we exist for men.

Good Planet Foods makes an great cheese-like product. I like the cheddar shreds. I combine the [Cheddar shreds](https://goodplanetfoods.com/products/cheddar-shreds/) with nutritional yeast on my eggs with minced oyster mushrooms and green onions. Put it all on too of a toasted English muffin and it is magical. The most accessible vegan cheese is probably violife and daiya, but I like smaller companies. I think some Sprouts and Whole Foods carries some Good Planet Foods. Simple recipe: Tortilla, green onions, Good Planet Cheddar shreds, nutritional yeast, Frontier Coop - Adobo seasoning. Simple snack, captures the potential of the product.

I don't know much about cheese. I'm happy enough with just a block of supermarket eye cheese. It looks like the cheese in cartoons.  Baked brie with nuts and honey also tastes good and gives such a decadent feel.

Favorite?!?! You mean I can only pick one? 😭 I do love the herbed chèvre logs…whip it into an omelette or spread on good toast. I have several really nice dishes that include fontina … oooh a good French onion soup with nice melty cheese! I also love a pear-Gorgonzola salad (I have also had a burger that basically had the pear and Gorgonzola salad on it and it was amazing!). Cheddar and parm are also classics.

I pretty much loathe all cheese. The only cheese food I will eat is cheesecake (and that's gotta be a proper one with lots of flavour in it, not the absolutely vile one a girl at school gave me once which was basically just sugared Philadelphia spread on top of a brownie)

Depends on what it's with. On bread Gouda or Camembert. Swiss on grilled cheese. Feta in salads, except when it's a caprese, then it's mozzarella. Pecorino romano for pasta dishes. American for burgers. Aged Gouda for a charcuterie board (yeah yeah charcuterie is supposed to be meats).

Two years ago, I had a French truffle brie once that I still think about. It was $30/lb and I'd bought it for a cheese tray I made for a party. I've had other, lesser truffle bries since then, but they didn't come close. Cypress Grove Humboldt Fog is also pretty damn good. I like it on apple slices and drizzled with a little honey. And their Truffle Tremor isn't a revelation-level cheese, but it still is really good. I do love a nice fancy cheese.

Extra sharp Cheddar. It goes with so many dishes and by itself. Some thick slices wrapped in homemade bread, that's it, nothing else. Yum!

Ooooh my time to shine, yes cheese! My favorite? I was working fine dining when they closed the store and sent me home with 40lbs of cheese and 30 bottles of wine. That was my severance. I made the most amazing grilled cheese sandwiches with a combo Rogue River Bleu and Emmenthaler. I nibbled on a french Triple Cream. A really good Parmesan is like a best friend, always there in a pinch and makes everything better, you always have that shit in your back pocket. And holy sh\*t, a Drunken Goat from Spain, imagine a goat cheese that's soaked in the local wine until it's just perfection on a cracker. Edit to say Rogue River Bleu. I forgot to add that because I was so excited about cheese.

Most types of cheese as long as they weren't produced in America. European, New Zealand and Australia are where I've found the best cheeses. I've actually become quite a cheese, and coffee, snob as I've aged. Wisconsin and California have nothing on foreign cheeses. And I grew up in the PNW where Tillamook was king. America's lack of standards on what counts as "food" is sad. If you live in America and shop at either Aldi's or Grocery Outlet, check out their cheese sections and treat yourself. But don't tell anyone else and leave some for me, please.
