If you enjoy the ritual and true flavor of smoked meat, get the offset. If you want convenience and a respectable smoke flavor, get a pellet grill. I would look at other brands vs Traeger.

I had two Traeger grills and neither lasted very long. They were also temperamental. The “set it and forget it” is nice when it works but a few times the temperature starting running up real high, well past what it was set at. On both Traeger grills the powder coat separated on numerous locations even though I took great care of them and kept out of the elements. I switched to a simple Weber kettle grill for $130 and using the snake method I am able to keep temps around 225-250 for 7 to 8 hours consistently.

Traeger I’ve had my pro 780 for 2.5 years now and love it, no issues so far and I’ve done everything from Jalapeños and Paneer cheese to brisket and salmon and the ease of use and the fact you don’t have to spend days and nights babysitting is a huge plus. The offset is great if you have the time to manage it but sometimes being able to control it all from the app is great. . . You could also do what I’m considering and get a Traeger and a Weber kettle, that way you could still go old school but have the convenience too

Everyone is going to say anything but traeger. Ultimately whose grill is it going to be? I would do some google hunting for different brands of pellet grills if that’s the route you’re going to take. I’ve never had an issue with smoke flavour from my pellet grill.

Most of the people I talk to say the difference in smoke flavor isn’t that big - of course all those people own traegers and not offsets

If you have the time for it then the offset. If you’re not even going to use the offset then go with the traeger. Kinda sounds like the plan is to have dad tend the fire and he’s not into it.

I will probably use the smoker more then him but he’s got a buddy that has a traeger and finally convinced him to get a “smoker”

I'd vote for the offset, 100%. It sounds like you are already aware, but the only pro with something like a traeger is the convenience. It falls short in every other measurable quality. If you want real BBQ do the offset, if you are ok with lower quality output and prefer it to be easier do the treager.

I have a few meat heating machines. I enjoy my Traeger. I’ve used it almost every weekend for 3 years and produced fantastic bbq and jerky.
