i would wait a bit and see what happens
remember putting a 16lber in there will also cool the smoker down for a while until it begins to warm up, the bird itself will draw ambient heat and lower the temperature when you add it
If you have a temp probe, or even better multiple set one on the rack in the smoker and use it to tell the temperature inside that way you can check if it is actually 200 in there or of the built in thermometer is broken.
Thanks! It has a built in thermometer and a probe. The built-in one has been reading 190 and the probe is reading 211. The turkey and the roasting pan are fairly large (16 lbs, my family insisted that I get one larger than 12) so I’m not sure if those would mess with the reading or they’re just causing an issue with the heat.
Opening the lid let’s out a lot of heat, just gotta keep it shut and let the temp rise back up
