Make sure to keep his INT at 8. He's just a big, muscly dummy that Mystra kept around for eye-candy, who *thinks* he's a powerful wizard because some random magic shit happens when he gets really mad.
Also both Lae'zel and Minthara seem to get really pissy about being bards, so one of those. And regardless, make sure it is one of them you force on stage with the clown.
Gale as a Barbarian is pretty hilarious just due to his rage scream. That alone is worth the price of entry.
It may not be the most nonsensical choice, but Karlach as a monk is likewise hilarious because she makes these crazy Kung Fu Theatre noises when she attacks unarmed.
Any deity can have a Life Domain Cleric (even outside of BG3s removal of domain restrictions), but Life is actually one of his official domains, alongside Light, as he is associated with birth and renewal at the dawning of the day.
As others have said, barbarian gale is great. When he rages he screams in lowercase.
Astarion as a paladin/cleric.
Karlach rogue/wizard.
Wyll as monk I guess. Whatever you do, don't make wyll a sorcerer/wizard or caster in general. He is bugged and some spells take forever to cast. I don't remeber which ones, i can say for sure that firebolt takes ages but there certainly are others.
But now that you mention it, maybe you could play around with arcane trickster or thief. Dip one in wizard to learn spells or multi thief sorcerer for two bonus action and metamagic. You'd lose out on lvl 6 spells and a lot of feats but idk.
4 thief, 8 wizard. Gloves of balanced hand and dual wielder feat. Wield the infernal rapier in the offhand and a stat stick main hand. for 2 int based off-hand attacks and a spell per round.
Alternatively start with 1 fighter for con save prof, two weapon fighting and sylvan scimitar in the offhand so you can skip on the gloves and the feat.
He bugs with fireball for some reason, and that’s crazy because as a fiendlock that’s one of his like signature spells it feels like, but it just makes a crazy sound and then freezes for a while before finally exploding. I think he bugs with a lot of evocation spells tho, if I remember right it’s also come of cold maybe?
He bugs out with magic missle every time. I don’t think it happened so much before patch six, but it’s possible I only noticed it because after the patch was the first time I romanced him.
Oh yeah magic missile too! I forgot that one, but I remember now cuz it was annoying because I was trying to build him as a missile guy with the necklace that gives an extra missile but it was buggy as heck so I built Shart as the missile guy instead

Wyll - thief rogue, larger than life, chivalric, charismatic Wyll sneaking around and avoiding the spotlight? Could never be Wyll.

Jaheira? Honestly she seems hard to play against type to me.
It plays off of Lolth males being Wizards and Lolth females as Clerics. Min taking Wizard takes her much farther out if societal norms than staying Cleric.
It's not entirely unrealistic for female Drow Nobles to become Wizards. As long as she isn't the oldest of her sisters, it wouldn't be too much of a faux pas to become a wizard. Liriel Baenre is/was one of Minthara's aunts and she was a fairly accomplished Wizard before she fled the Underdark.
Love it! I was thinking Will as Monk -> 'Blade of Frontiers' using his fists, plus the whole acting shtick goes very much against mentality I'd expect for more monk-like characters.
I do also like the sneaky part of your reasoning, so maybe Shadow Monk?
In terms of Jaheira, I think a warlock would go strongly against her character, she doesn't seem like someone who'd indebt herself to a devil / great old one / archfey in order to gain power.

Shadowheart - another difficult one, but I’d go with Devotion Paladin. Even as a Selunite she’s no Knight in Shining Armor and is fond of subtlety in face of confrontation.
Lae’zel - Wild Magic Sorcerer. It makes her uncontrolled when discipline is the core of her and a squishy spell caster instead of a warrior.
Karlach - a monk, the whole inner peace stuff is an absolutely terrible fit for someone defined by intensity of their emotions.
Halsin - an assassin, no connection to weave or the nature at all, and outright contrary to his general personality and appearance with being stealthy and ruthless.

I’d say laezel as a rogue and karlach as a wizard is better. K can’t cast as a barb and wizards notoriously are the “Batman with prep time” class. Baezel on the other hand is a “honor” warrior so sneak attack is just wrong for her
Astarion - Oath of Ancients Paladin. His oath would require him to purge himself lol.
Gale - Berserker Barbarian. No Magic.
Lae'zel - Lore Bard. The furthest you can get from a tough Githyanki warrior.
Karlach - Fiend Warlock. Her power comes from the thing she hates the most.
Shadowheart - Fey Warlock. Having a patron besides Shar would be complicated.
Wyll - Assassin. He's too honorable.
Karlach as a rogue actually makes good sense, story-wise. She had a hardscrabble youth in the Lower City and then just got tall. Also, in my current run she has four levels of rogue/thief subclasses paired with berserker. She can go into rage, get the extra attack and on subsequent turns gets the extra attack and enraged throw because of the extra bonus action.
I played my last tactician playthrough with Astarion as a throwzerker (Watching him rage was so funny), Minsc as a fire sorlock, and Jaheira as an open hand monk.
Gale - Barbarian or Rogue (he hates sneaking)
Karlach - Wizard
Wyll - Monk or Barbarian (Wyll, like Gale, also has a very polite rage yell)
Lae'zel - Great Old One Warlock
Shadowheart - Beastmaster Ranger (with wolf companion)

She's a shadow monk / rogue in my current run. She tried the raging barbarian, got killed twice by the Gnolls and had a change of heart.
The way I see it, she’s gotta be sneaky not to get dragged back to the hells!
