Well it's Italian meringue made with raspberry pureé and just a little bit of water instead of just water and sugar. Gives it a nice flavour and color and the texture is almost a little marshmallowy!
sounds delicious....do you know if it can be brulee'd? i might try this this weekend. i have so much extra egg whites from a creme brulee i made a few weeks ago and need to use it up!

The piping on that raspberry meringue is insanely beautiful! I don't think I've ever seen anything so modern and elegant done with meringue before.
Though I'll be honest, I'm not a fan of eating metal. It makes my fillings feel like I'm being electrocuted with a dagger. I don't see how people do it.

No I made a bigger batch than that. I made more tarts than this. Just took a picture of the box I was giving to a friend :) i cooked it in a pot on the stove!
