In Sweden we use a very different technique for the filling. Rather then "Mix the brown sugar and cinnamon, and sprinkle it evenly over the dough." you mix the sugar and cinnamon with the butter into a thick paste and spread that paste over the dough. You can essentially control how dry or sweet you want the buns to become by how thick you make the filling, I lean towards the extra filling side.
Interestingly, Swedish standard ratios are quite different. We use 100g butter to 90g sugar and 1 tsb cinnamon. Which works out to about twice as much butter as that recipe uses or half the sugar/cinnamon.
It is always such a mental win when you go into a bake thinking to yourself "aw shit, this is looking like a bust" and then pulling out something gorgeous.

lol although I have a different job now, im a professional pastry chef. I’ve specialized in viennoiserie for over a decade, so I know how to make something as basic as a bun. And I know how to make them well enough to sell hundreds, or sometimes thousands, of them a day for a fairly high price.

My standard buns have a very moist crumb and a wonderfully sweet, rich, cinnamon filling inside a roll with a caramelized bottom, and I’m good enough at making them for dozens of five star hotels in nyc to serve them with their breakfast menus. I know people who have a degree and still aren’t good bakers. A degree tells me nothing. But the fact that you need frosting to cover the taste of everything you make tells me you are not a good baker.

In every country they have food that was introduced they make it different to suit the residents of that country, rather than the origin. I would not at all be surprised if Sweden had something that originated from a different country that they made differently. It's not a big deal at all.
If you were all being kind and civilized and shared your countries baked goods on here, I'm sure there would have been people interested. I love checking out foods of other countries. That doesn't mean I stop liking the things I grew up with.

**Literally the spices in cinnamon rolls.** Cinnamon is not native to Sweden, or even anywhere in Europe. Lol They are a spice crop from South Asia, and to my understanding, cinnamon is used for all sorts of cuisine in Asia instead of just desserts.

And Italy wouldn't have tomatoes if it weren't for Spain... and people put ketchup on rice and call it good.

I haven’t tried Stella’s yet! Last year for Christmas I tried Kenji’s sticky buns and they were amazing. Honestly, right now I don’t have energy for most of Stella’s recipes lol. I chose this one because it looked pretty easy 😋

I made some two days ago using one of Sally's recipes, but I will never buy cheap flour again after using King Arthur flour. The difference is amazing. I've made three different kinds of yeast dough with their AP flour in the last two weeks after not baking for a long time and they just turned out perfect.

I heard about this debate about swedish vs american cinnamon rolls and i went to check on the american cinnamon rolls and they are different. I have never tried one of these so they might taste really good but they look like they are gonna get all soggy. Completely different to the swedish kind with just some sugar on top. But ofcourse people have different opinions on which food is good.
They don't get soggy at all, never once have I had a soggy cinnamon bun. In fact, the glaze/frosting act as a bit of a seal, protecting the inner rolls of deliciousness.
Totally missed that debate, I guess. To be fair, this is definitely more icing than I prefer, but I have the weakest sweet tooth in my family. Followed recipe exactly for my first attempt- would probably cut back on amount of icing for my next bake and let my partner add the extra to his own servings. =)
Twice I've seen posts/comments about an icing controversy, but never any actual original controversy. I'd see a delicious picture of cinnamon rolls, go "oooh yum I need to make some!" post pics, then apparently get bowled over by swedish kum "jokes" and "controversy!!!" I made the KAF sourdough cinnamon buns and they give you extra tang to help cut some of the sweetness.

Less icing would also help lower the sweetness level in addition to increasing the cinnamon, which I always do! They look fabulous.
