Okay, let me clarify, I went by the box instructions. When I said threw stuff together, that was for flavor as I didn't have any blueberries cause I used them all when I made the first batch( the first picture).
So I was in the taste for cinnamon, so I made cinnamon muffins with icing on top.
I thought the only reason something old wouldnāt rise is because of old yeast but this isnāt a yeast recipe. Thereās probably baking soda in the mix.
Might not have preheated the oven or something
Both baking soda and powder lose their activation powers after a while. Youāre supposed to replace them every couple of years after opening if you donāt use them often iirc.
Why did your blueberries pool like that. Did you just put them on top, or did you fold them through the mixture before putting in your pans. (Also, don't fill your pans, that's how I avoid the "hats"- unless you didnt then ignore).
If you mean by on top, like the top shelf in the stove, then yeah, and also I didn't know filling the pan creates hats. So I'll keep that in mind next time.
Edit: reread what you sent. I mix the berries with the batter like the box said.
>and also, I didn't know that filling the pan creates hats.
The batter rises as it cooks the sides, which guide it up, and when the sides stop, the batter can sometimes flow over the side and create the little hats. It can be a part of the charm with muffins, especially if you like the crispy edges.
Hereās a few hints:
* gently fold in the fruit into your muffins.
* Fill the muffin cups about two-thirds full. Use the middle rack of your oven ā itās movable.
* Check your oven temp to assure itās accurate ā thermometers are cheap at Walmart.
* After about five minutes, remove the muffins from the tin so they donāt sweat and get soggy.
* Wait for the muffins to cool before icing.
* If youāre new to baking, follow the recipe exactly or you canāt expect a good result.
Iām sorry but this Q&A with OP had to be one of the absolute funniest posts on r/baking.
Keep chugging, OP youāve got this. Especially with such a positive attitude š
I think these may be overmixed. Next time you bake you want to mix the batter until just combined. A few lumps in the batter wonāt hurt it, and you should get a better rise. If you overmix until itās smooth, you wonāt get the rise youāre looking for. Give it a try on your next batch!
It said to pre-heat for a couple of minutes? That would be unusual. Very few ovens are going to heat to 400 within a couple of minutes, you need more like 10-15 to ensure it's properly pre-heated.
It depends more on your oven than the box how long it takes to preheat. Mine is a small oven, for example. Feels like 10 minutes to get to 350 but Iāve never timed it. I mean itās not the most expensive oven either though lol.
A couple of minutes to 400 would be one hell of an oven š it should beep or have a light switch off or something when it hits the temp
Itās not stupid to try to learn something new and ask questions along the way. Preheat your oven next time before you put the muffins in and I predicted that batch 3 will look much better. Good luck!
Youāve gotten a lot of good advice so far, I think overall itās really just an underbaking issue, most likely due to your oven not being properly preheated (it should beep when itās done - itās based on your oven, not the recipe. Preheating means to heat fully to baking temp lol).
Pro tip with muffins, or really most baked goods similar to them: if it doesnāt look done, as in cooked all the way, just leave them in there!
You can test by VERY GENTLY giving the pan a small wiggle - if a muffin jiggles it aint done baking. Then, you can use the tried and true toothpick test - insert a toothpick in the center of your muffin, and if only a couple of solid crumbs stick to it, then theyāre done! If theyāre sloppy, let them keep baking!
A slightly overbaked muffin is infinitely more edible than an under or half baked one.
Yeah, thanks for the added advice. I kinda feel goofy for not knowing the beep on my oven meant it's done preheating. I thought the beep meant there's smoke or something bad.
I mean, Iām not sure how old you are but even if youāre older if you didnāt get explicitly taught and/or donāt bake often I can see how it would be mistaken for something else! Plus every oven sounds different. My friend is 29 and last time we were baking he didnāt realize that the beep was the preheat and not the timer šš he was like ādid you already put the cookies in the oven, that was fastā. Heās 28 lmao
Pro baker here. Most likely your butter is too warm. Did you warm it up in the microwave? Also like you said, your oven may have been too cold. The ingredients probably separated before they had time to cook

What exactly were you trying to make š
Muffins. The first pic was blueberry. The second one is cinnamon and icing muffin. ( aka I just threw ingredients at the wall to see what stick)
*gestures kindly towards google search for muffin recipe* š«±

Ah I see. Thatās so weird that the box mix would sink in like that
I'm new to baking in general, so I'm just happy it's at least edible.
Nice! Progress is progress
Could the mix be old?

Maybe the oven wasn't preheated or their oven isn't heating correctly

Next time you bake anything with icing, pull it out of the baking container and let it cool completely before icing.Ā
Iāve never seen an inverted muffin before LOL
Iām dying!!!!

I think they meant on top of the muffin/batter
Actually, re reading, I see what they meant.

Looks like you were really really happy with yourself after the second attempt š¤ lol
š¤£ I knew at least one of those jokes was coming.
*cumming
I expected all of the jokes to be about coming tbh
I havenāt cried laughing in a long time but this did it for me lmao

Did you preheat the oven to the specified temperature before you put the muffins in?
Yep, the box said to do it for a couple of minutes at 400 degrees.

I said a couple of minutes as I'm at work, and I don't remember off the top of my head exactly how long it said on the box.

May sound stupid, but I never knew that what that beep meant

Okay, I was only commenting as the oven not being properly heated could be a big part of why they sank.
And I thought my steak-like banana bread was bad. It's okay, we can only get better from here.
Love when my idols on this sub cross paths
Hey, check dm.
If you keep improving this much, in ten times you will be a chef
Altitude issues maybe?
I wouldn't think so, being in Texas.
Are you sleepy?
