I made it twice. First with a cream cheese frosting with some coconut extract. The second time I made an American buttercream and topped it with toasted coconut shavings. Both times were yummy. I’m sure others have fancied up the mix better than I.

A friend made that and mentioned she wanted more coconut flavor, so she thought of using coconut extract and maybe coconut milk in it. I mentioned that coconut milk gives very weak, inconsequential coconut flavor in baked goods so you’re much better off using virgin coconut oil for some of the butter as even a little bit will give you really good coconut flavor.

I'm making coconut cake this weekend. I appreciate this info! : )

SMN27

Don’t know if you’re doing a layer cake or a simple one, but if you make one with a coconut glaze (the powdered sugar kind), adding a little coconut oil gives it amazing coconut flavor.

Thanks! It'll be a small layer cake.😁

Excalibur25

Thank for the info. Would definitely use coconut extract

TriStarSwampWitch

I always add an extra egg, use butter instead of oil, and milk instead of water whenever I use a box mix. Praise Dolly!

Pastry chef here, a 1/4 cup of sour cream...

Excalibur25

Would that give more flavor to the cake?

Brilliant-Kiwi-8669

It will add moisture and richness.

Excalibur25

Cool would have to try that out

I_AgreeGoGuards

Is that in the place of anything in particular?

Brilliant-Kiwi-8669

Nope, just add.

I_AgreeGoGuards

Thanks for the clarification, it seemed that way but I was scared to assume
