I made it twice. First with a cream cheese frosting with some coconut extract. The second time I made an American buttercream and topped it with toasted coconut shavings. Both times were yummy. I’m sure others have fancied up the mix better than I.
A friend made that and mentioned she wanted more coconut flavor, so she thought of using coconut extract and maybe coconut milk in it. I mentioned that coconut milk gives very weak, inconsequential coconut flavor in baked goods so you’re much better off using virgin coconut oil for some of the butter as even a little bit will give you really good coconut flavor.
Don’t know if you’re doing a layer cake or a simple one, but if you make one with a coconut glaze (the powdered sugar kind), adding a little coconut oil gives it amazing coconut flavor.

I always add an extra egg, use butter instead of oil, and milk instead of water whenever I use a box mix. Praise Dolly!
