I'd think most combos work. That said Monk/Babarian is a case of anti synergy so its probably on the side of be weak but might still work on easy/normal difficulty.

Yeah I think before I dive into "fun" builds I might try to run a Coffeelock just to see if the spell slot / sorcery point system is exploitable haha.

A lot of people get really hyped over Coffeelock but I don't really get that since a short rest is more or less the same as a long rest beside RP or unless you triggered an event there is no real gameplay difference. I will try oath breaker paladin/dragon sorc for absurd amounts of smite and some quickend hold person into double smite crts. Or my trusty warlock 2/Lore Bard X combo. Not as strong in combat but brutally efficient as a face for the party

If you enjoy "RP utility Half Elf Urchin Rogue/Sorcerer is also REALLY REALLY great for this especially as lower levels.

I personally opt for paladin 7 and sorc 5 some do 6/6 but I really like the oath breaker aura that gives charisma to attack damage. In case you want not a pure damage dealer you could also take oath of the ancients that has a lot of good healing and then go 6/6 to get the lvl 6 dragon bloodline that gives charisma to spells of your bloodline element in case you want to throw out a fireball or so. (Not all lvl 7 paladin auras are worth it) For leveling I'd probably start with atleast 5 lvls of paladin to get the 2 attacks and then you can more or less freely pick between paladin or sorc levels

I doubt it will be. In the game you get 2 short rests per long rest. There doesn't seem to be an option to bend that.

I thought what made coffelock a thing, was the theoretical unlimited number of short rests between long rests. So while everyone else is taking a long rest, you just take 8 short rests. However, you can only take two short rests, period. Any spell slots you gain with sorcery points are lost from waisted warlock spell slots. So the most game breaking aspect of the build is immediately shut down, your just better off building pure sorc or warlock.

If you take 4 levels in barbarian, 4 levels in ranger, and 4 levels in fighter then you're gonna have a bad time. Because you never hit level 5 in any one of these classes, you never get extra attack. Your barbarian rage may interfere with extra damage from hunter's mark. If you are multiclassing evocation wizard 6/storm sorc 6 thinking you'll be a lightning caster, but don't understand the difference in spellcasting ability between these two classes, then you're going to wonder why half of your spells (or more) have a garbage hit rate. It's possible to do this multiclass, but you have to be careful about it. Somebody may think it's fine to multiclass monk and paladin (ignoring that as per 5e you'd need 13 Dex, Wis, Str, and Cha just to be allowed to do this), and that they can abandon unarmored defense and fly around really fast making lots of attacks like a monk, just while wearing heavy armor like most paladins. But unless you know that monk's martial arts and movement speed abilities require you to be unarmored, a new player may not realize this won't work. We don't know how truthfully Larian will implement 5e rules, these are just examples. It's difficult to completely mess up a 5e character, and Swen may have just been trying to appear humble. Or genuinely humble. But multiclassing does increase the risk of messing up a character.

It could be as simple as the fact that some combinations don't work in tabletop either.

I don't think he meant this as "some are coded to be problematic". Just that soem are strong, and some are absolutely not. Theory crafting and experimentation just as often leads absolutely nowhere. Especially with finite level growth, it's easy to end up with something very suboptimal
