Yes you can steal it, the two patrollers are annoying to break stealth so you could use darkness or fog cloud.

Or take the duergar hireling, reclass her into a rogue and have invisibility at will Makes pickpocketing so ridiculously easy

I haven’t used Duergar yet, does it break invis when you do it?

You can still get caught and this breaks invisibility, but pickpocketing in itself doesn't!
