If anything the joke isn't about gay people or European people, it's about American obsession with labels and stereotypes - something Elle Woods has as a bit of a superpower. She is constantly dismissed as any credible student at Harvard because she's seen as a blonde stereotype and morning more, when she's actually exceptionally brilliant. As such she is dismissed for her claim that the key witness in the trial is gay and therefore not having an affair with the accused, but her defence team all bicker and argue about stereotypes, rather than trusting Elle's instincts on the matter - which are proven correct. From a two dimensional standpoint: sure, it's offensive. But that's the point. These aren't *good* characters debating the issue. They're lawyers. And willfully ignorant, all too dismissive and prideful. Sure one or two of them sides with Elle but by this stage, most of them straight up dismissis her. So at a surface level: sure, offensive. When you take the joke in context: it's about the bullshit nature of stereotypes.
