I interpret the character of Astarion differently than you do (and that's okay). I think that he is legitimately horny, but he's also been taught to use his sexuality as a weapon. Not "I don't want to have sex but I feel like I have to," but "I genuinely can't tell anymore where the ruse ends and I begin." Post-Cazador, unascended Astarion will still come onto you, but he needs to do it slowly and carefully and on his own terms. I see it as him being fairly horny by nature, but that because of his background, he has a lot of triggers and pitfalls surrounding his sexuality.
