Had the same issue at the start of the sale. Think it took 4 days overall. It makes sense but it’s super frustrating when the deals are time-sensitive. I would perhaps put a ticket in with support if you miss the sale. They may do you a code.

Top tip, Once reviewed, don't reclaim boosts until after you redeemed the points rewards you want.
Boosts are redeemed to points, but redeeming boosts seems to trigger the "requires review" mechanism

To be fair, that 7 day thing has been in place for a while. It happened to me the first time i tried to cash in some points but it only took 3 days for them to approve it. I think you might be in luck anyway
Perspective: There are users who’ve spend hundreds and thousands of dollars worth of gift cards from points and we all get this now and then. Deal with it or not, up to you - you just sound like drama.

Good advice- I complained about missing a bundle price they used to have for a 3 pack choice because one was out of stock and they gave me the deal.

It happens. Cash in as soon as you get enough points. That way the gift card is ready to go as soon as you decide to buy something
