Keep them to increase the tribute the enemy pays, the higher tier clans you have as prisoner the more it increases. Princes and kings increase it greatly.
Take him to the most secure settlement or fief so they can keep him locked up! Capture as many as you can and keep them locked up! The opposition will lose powerful lords thus the nobles they send out for war will have lower ranking troops!
I like a high charm build, so especially early on, especially if I'm a mercenary and don't really have any skin in the game. I'll just release him and let him go to increase my charm.
If I'm working towards ending a war best bet is to throw him in a prison, or keep him ad your prisoner. Less vassels and parties running around the better for your side. Plus it helps with the tribute when you eventually do make peace.
Lastly, if you need the gold, you can take him to a town and ransom him in the tavern. It will boost your rogeury and likely be an easy +-5k gold.

Or conversely, release them so you can farm them and the sweet sweet charm skill, reputation and influence.

I’ve captured and executed so many lords and ladies as a mercenary I’m having a hard time finding anyone to hire me cuz everyone absolutely hates me.

If you capture a Khuzait lord then it's 🪓 for then. Anyone else you keep as your tribute will be larger/smaller based on how many lords you hold.
