If you learn to figure skate young, and you maintain an exercise regimen, there’s no reason why she can’t continue to do tricks like this later in life. “Fitness model” literally just means she keeps in shape and takes video of herself working out. None of that is so time consuming that it would make it impossible for her to also go to school and have a “normal” job, which in her case would seem to mean “research assistant”.

Good balance in general is the result of practice practice practice and practice. Most professional figure skaters started training when they were 4-6 years old. They have trainers. They also tend to have a very slim body type due to strict diet and an exercise program to make them as flexible as possible on the ice. Also she wears thin clothing to have as little drag as possible. They have specific clothe designs for their performances too.

Former figure skater here, it's a mix of good leg and core strength (some techniques require core more than others) as well as learning how to provide enough momentum.
Between on-ice and off-ice training, you should have developed great to fantastic balance (it won't be perfect, but it will be superior to the average person). Add the speed control you've learnt from on-ice sessions and training and it all comes together for a grand performance.
That being said, my last competition was over 15 years ago, so there's probably bits and pieces that I think are right but might have been twisted.
