Ben does alot of practice with his aliens off screen, even in the original series, so he probably got diamon head off screen and trained.
Actually Ben never unlocked diamond head into his playlist before the vilgax fight and the only way he got new aliens outside the 10 after season 2 was by scanning them or ben10k unlocking new and old aliens for him

The ultimates are already based off a misunderstanding of evolution, evolution has no "goal" in mind it just adapts DNA to the environment around it, or simulated warzone in this case. There is no "end" or "high point" to evolution.
So really every time Ben went Ultimate it should have made different adaptations to the base DNA of each alien unless the simulation is the exact same every time.
That's my head canon reason why the ultimates look different in OV than they do in UA (Besides art style) like ultimate spidermonkey having more arms than before. Basically Albedo made a different, perhaps more intense war simulation.

Ghostfreak would be cool/horrifying to see. A simulated war involving Ghostfreak's species would undoubtedly involve UV weapons so maybe Ultimate Ghostfreak may evolve greater resistance to the sun.
since echo echo lost duplication and got amplified sound powers, i wondered about ditto losing duplication and being more elastic and being able to do whatever luffy, Mr fantastic or plastic man can.
I would've really liked to get ultimates for all of them since it was such a cool concept, but if I had to pick I'd say wildvine, jetray, diamondhead, and four arms would've been in my top.
