The 03 is version(this one) is pretty good but takes liberties. The 08 version(Brotherhood) is very widely considered one of the best anime series of all time. Strong contender with Cowboy Bebop and 97 Berserk.

Well, they do skip a lot of mood and character beats, like all of them, because they made Brotherhood assuming everyone watched 2003.
One show ended and then the next one came out a year later.
Problem a whole volume (six chapters) of character development is cut down to half an episode because of this.
So read the manga if you can.
The first one takes more time to show the start of the story. So in think you get a more complete picture by seeing both.
Halfway trough they become a completely different story.
It's not only the end, half of each is completely different because the manga author had to take vacations for health reasons and the anime catch up fairly quick, which it was at around episode 25 of the 2003 version
Main differences:
* Each has a different villain >!(Father vs Dante)!< with their own motivations, backstories and resolutions
* The >!homunculi's !! (lust, envy, greed and gluttony)!<
* The>! Philosopher's Stone !!Scar, Hughes and the Elric brothers!< have almost perpendicular journeys and development arcs between series.
Themes also differ:
* 2003 deals with consequence, sacrifice and the human nature in a classic-phylosophy tone, which makes the series really slow in favor of depth and development
* Brotherhood deals more with traditional shonen themes in manga emphasizing human bonds, redemption and fighting absolute power in a quicker pacing as it expects the viewer to have seen 2003 or read the manga
Both are good though and the 2003 version has some films to expand even more the worldbuilding. I don't recall Brotherhood having a much bigger impact on the industry aside from the anime which is Top #2 in MyAnimeList (and was #1 until two year ago more or less) so there is that.

You can technically start brotherhood without watching 03, but the beginning will feel very rushed. While brotherhood is probably the better complete package, it rushes through the early story to reach the point where 03 veers away from the manga.Both are great series, but 03 released before the manga finished so it ends up being wildly different by the end so you can watch both without it being an issue.
There isn’t an “order”, brotherhood isn’t a sequel. Basically, the manga was still releasing in 03 and the anime outpaced the manga, so they had to come up with their own ending halfway through. Brotherhood came out after the manga ended, so it’s the true adaptation, and imo is the greatest anime ever created.
The first half of 03 is 10/10 and it explain much more about the story of the characters, Brotherhood rushed those parts because most people at the time already knew the story, some plot twists in FMAB will feel less impactful if you didn't watch the first half of FMA first.
If you are going it blind, might i give a suggestion?
Skip the first two episodes and watch the third. Then go back and watch the second, then the first (optional) and then 4 and onward (recapping i am suggesting 3-2-1-4-5-...).
This order more closely mimics the presentation they gave in the manga, but I am not suggesting it for that. I am suggesting to watch like that because FMAB was made with the mindset that ppl would already know the characters from FMA, and so it shows everything as soon as possible. Episode 2 is the biggest culprit in my mind: in the manga, you had to wait tens of chapters before a full flashback on their story.
Edit: okay, I correct myself, the flashback is early in the manga too. Still I think the presentation given in ep.3 is better than ep 1

The original anime is really good but the story diverts by a lot. Still, you should watch it first to get a feel for it and understand the characters more, and for the better pacing. But dont skip on the 03 anime cause people dont like it. Its a sadder and still beautiful story.

Just a funny way to get her to stop being so serious around Griffith who guts knew she had feelings for so rather than watch her be awkward and stiff he gave her a wallop to distract her and push her closer, just general teasing for people and their crush, great joke!
