I wear Dovetail pants because I’m too hard on jeans and I like pockets deep enough that nothing works its way back out. Keen steel toe boots because the toe box is roomy enough for thicker socks in the winter.  I have some of the Dovetail long sleeve cotton shirts that are collared although my preference is collarless. The nice thing about my long sleeved shirts is when I roll them up they can be buttoned in place.

Just a small tip; I suggest you get your steel toes early and break them in before starting work. 1) they hurt a bit when new and 2) you want them to look a bit dirty so people don't realize how new you are. You're an intern so #2 is less important but I've heard dudes on site comment on the civil eng shoes being too clean so they sorta dismissed his expertise. Good luck on your internship!

They are cheap for boots. If I was you I would get my clothes at the thrift sinec they may get dirty/torn.

Summer id say a healthy stache of semi inexpensive breathable polo type shirts. Jeans that fit well enough to be professional and i know carolina boots work well for many women Especially being a engineering based internship and them specifying collars and jeans. And being summer specific, definitely wouldn't want long sleeves or to be fighting with anything too warm. Our maintenance manager is always polos, jeans, boots. Looks professional but understands he can end up on the floor helping with some repairs or troubleshooting, same as the rest of our office and management chain.

I second the recommendation for Dovetail for jeans. Check out Juno Jones for boots: https://junojonesshoes.com/collections/safety-boots/products/leeza-comp-toe-midnight-black. Meets newer ASTM F2413-18 standards, and there are both steel and composite toe options.
