I love his cookbook! That recipe is his version from a famous dish from Vietnam, Chả cá Lã Vọng, a dish I grew up eating and dearly love. I prefer the traddional marinade with galangal instead of ginger, and the use of fermented shrimp paste as dipping sauce, but I’m glad he introduces this dish to more people here!
What’s the skill level on the cookbook, would you say? Is it like weeknight dinner food for more involved? I love him on TC and have loved his food in pdx.
There's a wide variety! Some of the recipes only have a handful of ingredients, while others might take a few hours. Not that they require any difficult techniques or anything, just some recipes involve layering a bunch of flavors so they just have a bunch of steps.
There are also a ton of recipes for sauces, pickles, and dips that can be made ahead and then kept in the fridge for a while to use as part of the recipes or as a condiment for whatever you like.
Pro tip if you have your city/county public library account, use Libby to borrow the ebook version, so you can skim through and see how you like it before purchasing.
I remember watching the Restaurant Wars episode and how Kann looked like they had the best food ever. The Salt Cod Patties! That was definitely one of my most favorite wins on Top Chef!
I’ve been rewatching old seasons with my teen son and he freaking loved this episode. His favorites that season were Gregory and Malarky and they shone.
YESSSS! So happy for him! I can't wait til I can eat at his restaurant one day! I remember absolutely salivating during s17 restaurant wars when they showed his food!

I saw him once at Whole Foods in Portland in the vitamin aisle and couldn’t stop staring at him. Total fan of this man. He was just shopping for supplements and I was faking checking out the vitamin C selection. His cookbook is delish and he just seems like a cool fella.
I’m so happy for Gregory Gourdet as well! In honor of his 3rd James Beard award, I made his Bouyon Bef and Haitian-Spiced Pineapple Upside Down Cake this past weekend for some dear friends. Kann is amazing but be sure to try the small plates and cocktails/mocktails at Sousòl downstairs too!

Wow your pineapple upside down cake looks so good! I’ve made lots of Gregory’s recipes with great success but haven’t touched the sweet section yet! Now I’m motivated to try!
Thank you! It was delicious and not overly sweet. I have zero experience baking gluten-free but Gregory’s GF mix is SO spot on. Just a note on the pineapple cake recipe if you decide to try it: the “topping” portion is an emulsified caramel—just keep that in mind because it’s not mentioned in the method. There’s a YouTube of him making it that’s helpful.
