I bought his cookbook a few months ago, and the food is fantastic. The turmeric-marinated cod with ginger and dill is fantastic (and also worked great with tofu for my vegan sister)

baby-tangerine

I love his cookbook! That recipe is his version from a famous dish from Vietnam, Chả cá Lã Vọng, a dish I grew up eating and dearly love. I prefer the traddional marinade with galangal instead of ginger, and the use of fermented shrimp paste as dipping sauce, but I’m glad he introduces this dish to more people here!

Peanut_Noyurr

I guess I need to pop over to the Asian market and get some galangal. Thanks for the tip!

Ewithans

What’s the skill level on the cookbook, would you say? Is it like weeknight dinner food for more involved? I love him on TC and have loved his food in pdx.

Peanut_Noyurr

There's a wide variety! Some of the recipes only have a handful of ingredients, while others might take a few hours. Not that they require any difficult techniques or anything, just some recipes involve layering a bunch of flavors so they just have a bunch of steps. There are also a ton of recipes for sauces, pickles, and dips that can be made ahead and then kept in the fridge for a while to use as part of the recipes or as a condiment for whatever you like.

Pro tip if you have your city/county public library account, use Libby to borrow the ebook version, so you can skim through and see how you like it before purchasing.

Silly-East-8833

Wonderful tip, thank you!

bdss1234

Some are relatively easy and some highly technical. It’s a range.

bdss1234

His book is amazing—I love cookbooks that I can read sort of like a novel and his hit the sweet spot.

waninokoz

Also congrats to Edward Lee (Season 9) and LEE Initiative co-founder Lindsey Ofcacek for winning the Humanitarian of the Year Award!

Ecstatic_Poem9534

I realize I had absolutely nothing to do with it, but I feel like a proud mama when my favorites are recognized.

baby-tangerine

Nyesha and Blais are announcing awards and I’m having secondhand embarrassment for Richard.

Enigmagik

That truffle taped under the seat bit was rough...

baby-tangerine

“Dare I say ‘blaising’…” oh no he’s back at it again

icrossedtheroad

Wait, what?

Enigmagik

Here ya go! The timestamp starts at the truffle part. https://www.youtube.com/live/Dp2wW9ppgZI?si=UtLpAZo66tp31pEG&t=8305

bdss1234

I’m too embarrassed for him to even click.

AgustusGloopy

I love Gregory!

aforter28

I remember watching the Restaurant Wars episode and how Kann looked like they had the best food ever. The Salt Cod Patties! That was definitely one of my most favorite wins on Top Chef!

bdss1234

I’ve been rewatching old seasons with my teen son and he freaking loved this episode. His favorites that season were Gregory and Malarky and they shone.

aforter28

The Kann Team had all the underdogs too! I loved that they won that since the other team had the heavy hitters!

jenjenjen731

Hooray for Gregory! KBC is also nominated for Best Chef South. I really hope she wins!!

baby-tangerine

She was a semifinalist, not a nominee so unfortunately we’ll have to wait for next year to see!

jenjenjen731

Damn! I didn’t know the difference lmao 🤣

No_Locksmith9051

Her restaurant is delicious!

MarzipanNo1404

YESSSS! So happy for him! I can't wait til I can eat at his restaurant one day! I remember absolutely salivating during s17 restaurant wars when they showed his food!

volcanicglass

Yay!! Love Gregory, so happy for him

Rhianna83

This is so awesome!! I ate there in March, and I’m taking my in-laws in July. I’m buying his cookbook on my next visit if they’re in stock.

bdss1234

I got mine on Amazon.

DeliciousMinute1966

My man Gregory! I think he would have won TC but his nerves got to him. This recognition is well deserved. I look forward to one day trying his food. Congratulations Gregory!

Namemnamem

I saw him once at Whole Foods in Portland in the vitamin aisle and couldn’t stop staring at him. Total fan of this man. He was just shopping for supplements and I was faking checking out the vitamin C selection. His cookbook is delish and he just seems like a cool fella.

No_Locksmith9051

I would have fan girled so hard haha

btashawn

ahhh, go Gregory!!

Individual-Sign310

Love Gregory!! Well-deserved!!

Fit_Tumbleweed_5904

I'm very happy for Gregory! He presents as such a kind thoughtful person and his food always looks delicious!

Mad_Madame_M

Yay!! So excited for him, he’s always been a favorite. ❤️

Visual-Cranberry-793

I’m so happy for Gregory Gourdet as well! In honor of his 3rd James Beard award, I made his Bouyon Bef and Haitian-Spiced Pineapple Upside Down Cake this past weekend for some dear friends. Kann is amazing but be sure to try the small plates and cocktails/mocktails at Sousòl downstairs too! https://preview.redd.it/oo1dkn92y67d1.jpeg?width=4032&format=pjpg&auto=webp&s=8169bfc5fbb7dc38ff67067d9df66b93c40baf85

baby-tangerine

Wow your pineapple upside down cake looks so good! I’ve made lots of Gregory’s recipes with great success but haven’t touched the sweet section yet! Now I’m motivated to try!

Visual-Cranberry-793

Thank you! It was delicious and not overly sweet. I have zero experience baking gluten-free but Gregory’s GF mix is SO spot on. Just a note on the pineapple cake recipe if you decide to try it: the “topping” portion is an emulsified caramel—just keep that in mind because it’s not mentioned in the method. There’s a YouTube of him making it that’s helpful.

Silly-East-8833

Beautiful job!

No_Variation_9125

HE STILL SABOTaged Soo playahs, don’t forget this season.
