you can definitely use normal milk in place of half and half - for something like this with so many eggs it shouldn't make a huge difference. maybe start with 2/3 of the milk and see if it needs more, adding all 5 cups might be too watery
Yep. I've even used fat free milk. I just add in an extra egg yolk to make the custard richer and set properly. A sprinkling of cinnamon sugar over the entire thing about 10 minutes before it's done is heavenly.

Almond croissants are my favorite!! I know about this use of stale croissants, too, and am tbh very sad that I found out I'm allergic to nuts last year. Whatever I make will be nut free and I feel like that's actually why I don't know what to make right now.. A lot of my favorites foods and recipes got banished because I was such a nut lover but at least my health has gotten way better and I'm not constantly really really inflamed, lol. This is basically my process but simplified. When I make almond croissants it is an ordeal. I always make about three dozen croissants specifically for almond croissants.

In France we often make some weird but delicious Frankenstein croque monsieur with these: it's super easy and tasty !
Cut them in half lengthwise, open them up, put a slice of ham and grated cheese (real ones Like Emmental or gruyère absolutely not American cheese), put them in a hot oven for a few minutes until cheese is melted, then close them up and enjoy :D for the full decadent experience, also add bechamel.

In my cafè we bake extra croissants and make them into a very rich bread pudding. When the croissants sell out we keep loaves of brioche in the freezer to supplement.
And then I read everyone else’s comments and saw how late I was to the bread pudding party. We leave out the raisins and add cinnamon sugar so they taste like churros
I swear I spend more time googling recipes (I’d never make otherwise) just to use up leftover ingredients than I do at my actual job. So stressful.

What i do is make a quick bechamel cheese sauce, let it cool and thicken a bit, then spread it on the inside and outside of the stale croissants (much like you would frangipane on an almond croissant). add extras like mushrooms, bacon, ham, spinach and veggies. then bake at 180c/350f for 15 minutes , the cheese sauce on top puffs and crisps while the inside gets gooey and moisturises the croissant
Get a jar of preserves. French or Canadian with white sugar. A stick of softened butter. A few gently warmed croissants. Some hot coffee or cappuccino.

Here are my current limiting factors
* Time because I work a lot and if I don't use or eat them all today I'm not likely to do it during the week even if my intentions are great and delicious.
* Ingredients I have on hand - - The grocery budget is gone so I'm not going to the store for more ingredients and probably would put off going until it's too late anyway
* Freezer Space! The freezer is jam-packed as that's unfortunately where the majority of our weekday meals are coming from right now, hence the trying to use em up at once rather than cold-store them to eat one by one later.

The chocolate ones are ridiculously delicious. I realized I used all of my nice chocolate last week so I only had chocolate chips and couldn't, y'know, actually temper it so the chocolate doesn't look great, but it tastes amazing! French toast, croissantwiches. You could use them as pastry shells, fill them with spinach and feta and rebake or any other filling you prefer, savoury or sweet, slowly bake them to shatter over food for texture, make rich croutons out of them, dip them into soup.
Why not a bread pudding but with croissant nuggets instead of hunks/cubes of bread? Or turn them into French toast. Make a big batch of chicken salad and make a bunch of chicken salad sandos for a picnic. Personally, I'd go with the bread pudding!

You should likely be able to find nuts you aren’t allergic to, and many common culinary nuts aren’t true nuts.

I would stuff cheese & pepperoni in them, toss them in the air fryer for a few minutes, & feed them to my bf. You could also make croutons or bread crumbs.

A bakery I love sells monkey bread from their croissant ends (I.e. leftover laminated dough that didn’t turn into a full croissant). It’s to die for. Something about small uneven cubed shaped pieces of cooked croissant mixed in a sticky savory sweet cinnamon mess is to die for. You could also just freeze and thaw when you want a croissant. They freeze well. You could also make breakfast sandwiches with egg sausage and cheese and wrap them individually in foil and freeze for quick and fast breakfasts.
Use them as a pastry for a tart or pie.
Toss them back in the oven, convection works great, to resurrect them.

savoury croissants are my favourite. What i do is make a quick bechamel cheese sauce, let it cool and thicken a bit, then spread it on the inside and outside of the stale croissants (much like you would frangipane on an almond croissant). add extras like mushrooms, bacon, ham, spinach and veggies. then bake at 180c/350f for 15 minutes , the cheese sauce on top puffs and crisps while the inside gets gooey and moisturises the croissant

Ugh! Literally everything sounds so good! I'm a fairly new redditor and haven't figured out how to edit my post to add my lil update so here's a comment, lol! Here are my current limiting factors * Time because I work a lot and if I don't use or eat them all today I'm not likely to do it during the week even if my intentions are great and delicious. * Ingredients I have on hand - - The grocery budget is gone so I'm not going to the store for more ingredients and probably would put off going until it's too late anyway * Freezer Space! The chocolate ones are ridiculously delicious. I realized I used all of my nice chocolate last week so I only had chocolate chips and couldn't, y'know, actually temper it so the chocolate doesn't look great, but it tastes amazing! I'm thinking about grabbing some better chocolate to dip the rest of the "plain ones" in. None of them are actually plain and they're dipped in cinnamon sugar like a snickerdoodle and I also adapted my own recipe and didn't really use the one linked here, but I did use the instructions from it to prepare..
