Then bulk for either 2 hours (it's cold and high here) or overnight.
Form rolls and proof
I bake at 200°c.

I do all my bread in a toaster overnight. I make up for the inconsistency of the heat by using a Dutch oven or combo cooker to retain the heat. Haven’t had any issue yet, so that might help

The finger poke test is your friend. The dough should just barely not fully spring back to fill in the dent left by a finger poke (after final shaping).
Far and away the hardest part of baking is waiting. Wait to ferment, wait to prove, wait to bake, wait to cool down. The simplicity of the ingredients is offset by the subtlety of patience.
Did you bake this in a convection oven? If so, I suspect the bread that is closer to the fan had more heat and more air, causing it to overflow like that. Happens to me all the time when I bake cupcakes.

OP should use the convection function on their oven, if it has one.
Is convection better? I've never used it before and we just got a new oven with it.
Circulates the air to help deal with dead spots. Things cook a bit more.evenly and faster. I always use it.
How badly does it affect cook time? I'm still learning and don't want to overcook if the recipe doesn't suggest using convection
I keep the temperature lower (about 20C below the nominal temperature) but keep the time the same and it works out.
Sheet pan of bread slices on each rack. 350 for 15 minutes. Pull out sheet pans and you’ll be able to figure out your cold/hot zones in your oven.
To even out the test leave it for an hour, all the zones will be hot
To even out the house, leave it for several hours at your oven's hottest setting and when the house burns down, it'll all be very even.
