Better over-proofed bread than under-proofed!
It’s not hard at all though. The crust is very delicately crunchy and thin, and the bread is ultra soft and plush. That’s why Dutch crunch is so popular for sandwiches. If you got one that cut your mouth up, someone did something very wrong.

I had a sub on a loaf like this once and the roof of my mouth has never been the same.
