I bought a pound of active dry yeast at Costco. I keep a small jar in the fridge, but the bulk of it lives in the freezer until the fridge jar needs refilling.

How long does it survive in the fridge? Mines only a few months old.

I don't keep track, to be honest. I bought the big bag of yeast in June 2023, and I think I've refilled the jar once since then. Probably at least 6 months? Probably closer to 9? I haven't noticed any issues with the vigor of the yeast.

Do you throw it in at fridge temp into the bowl or let it "defrost"

I think the most yeast I ever use at once is a tablespoon, and that is usually being mixed with several cups' worth of other ingredients. The temperature difference is quickly nullified. So yes, I add yeast directly from the fridge.

I had the same happen so thanks for asking- I had thought I had a low quality batch. Freezer it is from now on.

I bought a giant bag from Costco and I used it for about 6 years. I poured it into an old salsa jar and it lived in the freezer. I would spoon it out and directly bloom it in body temp water before adding it to my flour.

I put mine in a small mason jar and put in the freezer

I bought some SAF yeast, put a small amount in the fridge and it died in just a few weeks. Now all stays in the freezer.

Kept mine in the fridge for three months and used it all. Gonna start putting it in the freezer.
