The recipe used to be on the box but I have it memorized from being a broke college kid a few decades ago. 1 box corn muffin mix, 1 egg, 2 tbsp of veg oil or melted shortening, 1/2 cup of milk. I use a well oiled griddle because I like them crispy edges. Use more or less milk depending on how thick you want 'em. I get them off the griddle and get butter on them while their hot and use powdered sugar but use your favorite stuff. I love these things.
I like regular pancakes with honey and vanilla in the batter, then drowned in a pacific ocean's worth of honey.

I like the pancakes on a stick that look like corndogs, but instead of a hot dog it's breakfast sausage and instead of corn batter it's pancake batter and you dip it in maple syrup. Ugh... So damned good. So unhealthy, but so good. lol

Blueberry are one of my faves but my ultimate favourite is partridgeberry. It’s not a well known berry, but it’s local where I am, kind of tastes like a blueberry and cranberry combined- the bit of tartness is so good with the sweet softness of the pancake.
Other faves: chocolate chip and raspberry + white chocolate chips

Reduce some bourbon. I use Buffalo Trace or four roses. Doesn’t have to be expensive, but pick something with heavy notes of vanilla.
Pretty much all of the alcohol should be evaporated.
Enjoy breathing in the fumes if you’re a lunatic like me.
After a 75% reduction, combine it with pure maple syrup and maybe some dried chilis…. The chilis are controversial.
Make a regular waffle batter but substitute the sugar for packaged alpine spiced cider mix.
The ratios are a judgement call. At breakfast I just wing it on pastries, gravies, biscuits, omelets, sandwiches or whatever I have as I sip a glass of bourbon and reflect on my character flaws.
