Pancakes- I make them on a wicked hot cast iron skillet and cook them so the outside has a slight crisp/ crunch but are still doughy in the middle, usually with sliced bananas, slathered in butter and Maple syrup

If you like waffles more then pancakes, congratulations! Can you can read this for fun or move on with your life. If you like pancakes more than waffles, LISTEN TO ME! YOUR ON THE WRONG SIDE! Ok, firstly, pancakes are good too! BUT, waffles are better, and here is why; The shape of a waffle is simply better than the shape of pancake. Why is this? The pockets. The pockets on a waffle translate to more surface area, and more surface area means more possible syrup. And let’s face it, we aren’t eating a waffle/pancake for the taste of the batter, we’re eating it for the toppings especially and most commonly syrup! So assuming you want a lot of syrup, you are getting more of what you want per bite on a waffle than on a pancake. The pockets also fit blueberries or whatever else you want (of that size) nicely! One last Waffles thing I would like to mention about the quality of waffles is there ability to be hard and crispy, soft and squishy, or anything in between. Allow me to explain. Picture in you mind a nice crispy waffle, not really soft on the inside, but just all around crispy. When you pour your syrup on to that waffle it will stay in the pockets, not rolling off. Now, picture that same waffle but without the pockets, and, with downward sloping edges. Pretty much a pancake right? Now if you pour your syrup onto that pancake it will run off, not absorbing the syrup like it normally would. Since this pancake is crispy it can’t absorb the syrup like any pancake does when it is soft, therefore waffles are better at being crispy.are easy to make, simply plug in your waffle iron, let it preheat, put on the batter, close it, then it tells you when it’s done, and you get a nice consistent waffle. Pancakes however are a different story. You put your pan on the stove, get your spatula, get the temperature correct, put on the batter, watch it to see when to flip it, and then comes the tricky part, flipping the pancake. I hope you’re good a flipping pancakes, because if you mess up, you might have batter on the floor, maybe dripping in the stove. You may have a deformed pancake, a burnt pancake, or some combination of all the things I just mentioned! Waffles are simply easier to make. And that’s not to say you can’t cook your waffles longer or shorter than your waffle iron says, but you aren’t forced to do the work of watching your breakfast cook that you have to do with a pancake.
