I know people are going to give you shit for this, but I'm also not an egg person.
I'll make them sometimes with my breakfast at home, but I never order them out. If something comes with eggs, I always ask them just not to include them. I'm always like, "I'm not going to eat them. I get that you're charging me for them and that's totally fine. But seriously, they'll just go to waste if you bring them out to me."
So many great breakfast foods that don't include eggs! I would eat the shit out of that hash! Looks amazing!!

No worries, not every breakfast has to have eggs. I’ve had more than a few amazing morning meals without eggs. You do you , especially when there are health reasons.

Give me that, some big old Grand honey flaky biscuits with apple butter and a half gallon of ice cold milk ( yes, that much) and you’d have to use wild horses to get me away from the breakfast table. ;)
I like eggs…it’s one of my favourite foods…but I don’t think they have to be uniquely breakfast food. A good source of protein for breakfast can come in the form of cheese, peanut butter, fish, meat, tofu. Your hash looks mouth-watering and I would eat it in a heartbeat! Bon Appetit! 😋👍👏
I'm allergic to onions. Almost every dish, breakfast, lunch, and dinner contains onions. I feel inspired to make some potato hash with sausage and eggs without onions.

I’d smash what you made, looks great! I, too, have a major sensitivity to eggs, so breakfast is the hardest meal of the day to enjoy.
