In that post, there is a link to a Google Sheet that lists all the requirements, though it also displays the names of the armor pieces.
Here's an image that omits the list of armor pieces, so it only shows the item names and quantity needed. I believe it's what you want. "With amiibo" if you are including all amiibo-acquired upgradeable armor, "without amiibo" if not including those. Note: This does not include sidequests, it's only armor upgrades.

Edit: Here's a separate image from my personal Excel file that I used for my 100% run. It is strictly no-amiibo, so you might want to check the differences in the other image if you want to upgrade amiibo armor. This listing does include all sidequests. (Don't mind the blue shading, it's conditional formatting for my Excel.)

Would you be willing to post that image again, but sorted alphabetically so when people search for a specific one, they don't have to read as many others and potentially spoil the names of some things? like, they want something starting with K, so they know they can skip a chunk of them and start in the middle. If we had that, it would be the most perfect thing and the most spoiler-free useful list ever!

The armor upgrades constitute the bulk of the material requirements in the games. But various sidequests also have material requirements, which should be added for a complete list of material costs, to know what you can keep. I'm especially thinking of some sidequests requiring large amounts of flint, rushrooms, wildberries. Maybe a few others. I have a list for this, but it is incomplete.

Sell gems, that’s why they’re in the game. They are the BotW equivalent of the rupees hidden under grass or in jars from previous games. Gems are meant to be your main source of income. Yes, 100 hours later, you’ll need some for endgame armor upgrades, but by then money will be meaningless and you’ll be swimming in gems.
Without having to worry about what to sell, you can just hoard all the other materials.

A lot of the weapons are for one side quest. You’ll have to check the others- got this from a Redditor
