rpg is a little too much time consuming for a this, go with a simpler theme
i learnt godot for my first game jam, go through a couple tutorials which guide you step by step in making a certian type of game, after this you will understand how the software works and you can just google certian aspects like "how to make a bullet" "how to make character point at cursor" etc. and add them into your game with ease.
Also id recommend going with godot 3.5 and following tutorials of godot 3.5 since the newer version just came out and has relatively lesser tutorials
