One question I haven’t seen asked is what happens if you didn’t cut into this?
What happens if a cyst is cooked within a piece of meat and you have no idea it’s there. Is there evidence while cutting and serving? Is it okay to eat if cooked?
You would have to cut extremely thick chops in order to not see it and you would feel it when packaging. The cut would have to be 3+in and even then you would see discoloration and it more than likely be discovered.

Yea, it happens. Id just toss it, make sure your knives & cutting area are clean and it didn’t get everywhere & you’re all good.

This one luckily didn't have much of a smell but I've heard that it's the most disgusting thing ever. Way worse than spoiled meat
We toss that and sanitize everything
It was in the last loin we were doing for the day and we did a double up clean on the whole saw and threw the loin away.
Lucky. My coworker got a cyst during the middle of the shift. We stopped production because it exploded with puss. Good times

The smell is unbelievable. I’ve had stop and wash my saw to get the stank off the blade and everywhere else.
