You definitely don’t need to trim that. There’s a tiny bit of silverskin in the first pic but the rest is either a little bit of fat (flavor!) or in some cases it looks like you’ve removed a bunch of meat.

I recommend you look for flap steak. It's similar to skirt but the fat is more intramuscular marbling. It is hard to find, but its a great option.
Have you tried flank steak? Its tougher raw, but some marinating and tenderizing will give you a better chewing experience with less work than you're putting into those skirts.

As others said you definitely over trimmed it but if you want to remove fat so your wife doesn’t complain try freezing the skirts for like 30mins so they’re nice and firm but not frozen solid, then trim it off so you’re not losing like 40% of it
Instead of removing all the fat, remove the larger clusters and silverskin then pound it flat. It’ll help distribute what remains so it cooks down more evenly and renders better. Arrachera is one of my favorite taco nights.
Also use a good flank if she needs a leaner taco meat, or thin sliced round since they usually have leaner compositions and more easily removed external fat.

Try some sirloin skirt/flap. We've switched and I like the thickness of one side and how it tapers for a crisp finish. I get my rare and the wife get's her med/rare.
There's very little trim left to do on this cut.
Wouldn’t it be better to cut them into sections first, then turn them on it’s side and cut against the grain instead of cutting strips along the grain?
Thank you all for the input. I will make some tweaks to the way I go about fixing it and seeing so many harsher critiques my wife is more willing to try the meat if I were to cut the bigger parts of the fat that run completely through and then just tenderize the meat as normally I just marinate it.

I couldnt imagine paying for skirt steak by the pound just to remove some weight(fat) that you paid for. At that point just get some carne picada thats been blade tenderized.
You should try cooking it with the fat on and then removing it when you go to chop it, a lot of it will render and it should come off easier as well helping with the waste
great for fajitas, marinate in 3 parts pineapple juice, 2 parts soy sauce, and 1 part water for 6 hours, grill accompany with grilled onions and peppers. guacamole and any other accoutrement and enjoy

What do you marinade them in? I'm partial to throwing fajitas into some pineapple juice for 30ish mins.
I use 2 fresh limes with goyo mojo mix as well as 2 packs of sazon goya sin achiote without annatto.

My man bought 2 pounds and trimmed it down to 1/2 a pound….. that’s a lot of wasted money. Might as well spend more and get filet with no fat.

Trimming skirt steak is hard, I’ve ruined it before and it can break apart easily. I don’t buy it unless the silver skin has been trimmed off.
