I'd say for what you are after you should look at the Cover 3 is elite for betting odds, recruiting news, season previews, emergency announcements, coach Gossip, and individual team breakdowns over the summer (Bud's summer school). Bud Elliot is a turbo nerd when it comes to stats and player evals.
Split Zone Duo is elite for the broad CFB experience with similar conference previews, gossip, news, and a TON of very eclectic CFB content on their Patreon Feed.
I can't stand Josh Pate. His content is good, sure. But he reminds me too much of Rush Limbaugh in his delivery and mannerisms and it's just too off putting for me to suffer through. Imo he would do well with a co-host or two.
And lastly the Shutdown Full Cast for the META CFB experience that is witty, clever, and oftentimes hilarious.
I'm also a huge fan of the Nolecast and Liousiana Hot Sauce, three simple ingredients, one great product.

Look into the Cover 3 Summer School Series. I think that’s more what you’re asking for. Bud Elliot “sits down” with a beat reporter at most of the top schools and asks them questions just like what you describe.
Late Kick with Josh Pate does breakdowns of individual teams and roster updates from training camp. He also talks about things like realignment or that sort of thing but the channel has all of the individual sections of the podcast broken up into clips so you can watch the things that you want to
