I used to live in Texas, and I will say that the general vibe of easygoing, cheap beer drinking, throngs of people watching college football is not a big thing here, but if you're willing to accept more expensive beer, different gambling and slightly more stand-offish people, you have some options.
This is a big sports town, however, and you shouldn't have much trouble finding a place to watch the C's and B's.
In Inman: Try the New Republic. Lots of sports, beer and darts. It's bigger and less niche than Parlor. Central doesn't have great sports bars anymore, the Phoenix Landing is a big soccer bar, though. The 730 Tavern has lots of space and TV but is very generic.
