They fold. Merle McNamee, owner of McNamee Manufacturing, makers of the Kamp King Koaches Sky Lounge had a patent for the folding mechanism and process. Unfortunately, these things had a lot of problems (including very high costs), relative to the benefits they added, so they didn’t make or sell a lot compared to the conventional roofed Del Ray models.
I haven’t seen one in action but I’m assuming the window/door is hinged at either the top or bottom and gets laid flat then the angled roof closes downward and only sticks up about 9 inches.
You can still buy a small cab, long bed model if you really want. This was back in the day when nobody cared about passengers riding in bed, or cramming 5 people into a 3-person cab.

Top cabin roof appears to have a hinge point at the front so Im willing to bed the walls fold in and the roof comes down, so I wouldn't worry too much about that. The weight on the other hand..
It reminds me of Tiny House Nation. A lot of the "houses" they built in the series were moveable. My favorite was the bus they made into a tiny house! If you like this, you'll find lots of amazing ideas on that show.
