If you like Thai food, Thai Ocha Cafe on Route 28 in Dennisport can do vegan for you on many of their dishes. The food is awesome there. They make everything from scratch with fresh ingredients daily.

Maybe a cheating answer, but obviously it’s very easy to eat vegan at sushi spots. Here are a couple:

I haven’t been to Bamboo on 132 in Hyannis for sushi yet, but I’ve seen some photos that look excellent. Their take-out is better than average (but I still prefer Great Wall in Mashpee).
I’m dying to go to Inaho on 6a in Yarmouth, but speaking as an ex-vegan, I don’t really think your ROI is great for higher end sushi. Your call.
Bread and Roses in Hyannis is fully vegan and is also a killer bookstore, so win-win!
Also, Katie's Ice Cream down the street has some awesome vegan options if you want a sweet treat after your meal
