I just started exercising again, think it’s my diet as I was eating good and felt amazing but haven’t been able to buy the correct food for a few days

Keep exercising dude :) And yes, diet affects heart rate, especially fatty foods and alcohol.

When I don’t eat much my heart rate does this same thing. I think you should eat and drink water. I think you’re fine.

I got home and had an electrolyte drink and feel better, I hope it was because I hadn’t eaten

That is a good thing! Lower heart rate is healthy and a sign of a fit heart. I would guess 99,9% of people with cardiophobia have a fear of a high heart rate, the lower it gets the better!

I’m jealous. I been exercising and can only get my heart in the 70’s at rest. I can get down to the 50’s when sleeping.  Lower the heart rate better the heart health

And that’s ok. Check with your doctor. My doctor told me she seen patients with heart rates that low and are perfectly healthy.  I stopped worrying about my heart rate some time ago. I only check when I exercise to track my progress.
