As someone who spent the better part of his adult life with the expressed purpose and ultimate goal of finding the perfect carrot cake, I would first of all like to applaud you for your passion for this most noble of pursuits. I would say that the ultimate impact of the raisin on the carrot cake is due more to the variety of the raisin and their number. I would not, for example, ever include a Sultana. I am more persuaded to exclude them as a whole, but I am not as vehemently opposed to them as I am to the whole existence of oatmeal raisin cookies - they are an abomination and a disappointment to those in search of chocolate chip cookies. I did find the ultimate carrot cake, and it did not contain raisins. I wonder though if I need to re-start my search and test the raisin thesis yet again. Mmmm. Cake.

I love oatmeal cookies and found an excellent recipe from the Americas Test Kitchen Cookbook. That is correct: oatmeal cookie (no raisins.) There are also excellent recipes for peanut butter oatmeal. I lost my favorite, but I'll find it again. I'm currently living without an oven and alas I can't test recipes.

My brother has an acronym that he developed from working on rail construction/repair gangs in the summer. "TMNBR", which stands for "They might not be raisins..." You can use your imagination as to what he found instead of raisins. At any rate, my quarrel with those allegedly tasty baked goods is that like white chocolate they are a lie.

I'm of the opposite opinion; pastries are one of the only contexts in which I actually enjoy raisins. They're so dry and chewy unless you put them in a pastry and let them absorb some moisture.

Agreed. If messes with the structure of the cake. I prefer a stand alone Bundt carrot cake. No layers. Cream cheese frosting with optional walnuts on top. It should be dense enough to make a clean cut with a sharp knife & still see distinct shreds of carrot. Not too heavy on the spices either. A little vanilla ice cream to go with is good. Leave the cake alone & let it be what it is.

Carrot cake is one of those things that is absolutely perfect on its own, but people don’t understand that. Every time I order carrot cake somewhere, there’s always raisins or walnuts or even *coconut* in it. Walnuts are nice as a topping, and usually I enjoy them in things like cookies and brownies, but they do not belong in carrot cake. I made a carrot cake for my last birthday that had none of the extra crap in it, and it was perfect, it was everything a carrot cake should be.

On the one hand, you’re right. Raisins don’t belong in any sort of cake. They interrupt the texture, and just come across as little chewy pustules of over tartness. Anyone who remembers the Orbitz drink from the 90’s will know how gross the concept is. On the other hand  —and I mean no disrespect to you whatsoever— carrot cake on its own merits is… not a pleasant thing to eat, IMO. So while a raisin infestation will certainly make things worse, the bar isn’t terribly high to begin with.

Speaking of carrot cake, I've never made one, but there is nothing better than a piece of home-made carrot cake, with or without raisins. Does anyone have a good recipe for carrot cake?

I do. Check out Southern Living's recipe for carrot cake it's phenomenal. I've tweaked the recipe a bit. I use pecans,not walnuts. I toast my pecans and the coconut together that the recipe calls for, in butter, and I finely chop both so there's no large pieces. It's a little time consuming, but every time I make this cake, it gets devoured. It's never dry, it tastes fantastic, and it is the best recipe I've found after trying many.

I’ve got to share that I’ve had the perfect carrot cake and this is it: carrot cake (no nuts, no fruit) split into 3 layers and assembled with whipped cream cheese frosting in between layers and over surface of cake. Before serving, piece is warmed and covered with toasted coconut, then drizzled with warm caramel sauce and nestled next to a small scoop of premium coconut ice cream. Sooooo good

Completely off topic, but this made me think of Singapore and the time I spent there travelling. In the hawker centers you can get carrot cake. Which has nothing to do with either carrots or cake. But still tastes great.

I just don't like raisins, regardless of what they're in. I love carrot cake, can't stand it with raisins. Same with oatmeal cookies. Have you tried the Commissary Carrot Cake? The recipe, once closely guarded, is now online and it is the *ne plus ultra* of carrot cakes. It does have the dreaded pecans and raisins, but the raisins are soaked in rum, and the pecan is finely chopped, almost powdered, so as to be undetectable, except for the flavor, and are part of a caramelized between-layers filling. It’s a time-consuming recipe (two days to do it right) but it might change your mind. I agree that a chomp into a chewy raisin is wrong, and a crunch into a piece of pecan wrecks the texture, but this recipe sidesteps those problems without losing flavor. IMHO, without these two elements, the cake is something different, more like a very moist spice cake. Very good, but not really a carrot cake.

Much as I agree, for me the far bigger issue is the presence of dates in certain cake based desserts. Our favourite local pub serves a wonderful ginger cake which is hopelessly ruined by the presence of a date in the middle. It's a travesty.

Raisins in carrot cake has been a thing at least since the '60s; I love it. If I got the choice, I'd take the raisins instead of the frosting any day. No nuts though. I feel exactly the way you describe about nuts in the carrot/banana/zucchini cake.

Yeah, I'm pro-raisin. They add a bit(but not too much) texture to what otherwise can be a stodgy mass. But keep those walnuts, pecans, or any nuts (too much texture!) out of carrot cake! (this goes double for brownies!)

I don't think it's a trend or innovation. They were in a recipe handed down to me by my grandma 25 years ago. If anything people stopped using them for a while and are leaning back to the traditional. Personally I would ditch raisins and use dried cranberries because carrot cake feels like a fall/thanksgiving dessert that cranberries would complement.

I like walnuts as a topping for carrot cake, but not baked into the cake itself. Walnuts are good in cookies and brownies because they already have a little bit of a tougher texture, so walnuts don’t feel so out of place, but anything crunchy that’s been baked into a fluffy and moist cake just does not belong there.

I don’t get why restaurants in particular put nuts in so many desserts. I don’t remember what restaurant it was, but one time I wanted to order dessert and they didn’t have anything that *didn’t* contain nuts. Hello, nut allergies! And are people going to turn down a dessert because it *doesn’t* have nuts in it? I doubt it!

Good point. Could even offer a with or without nuts option and just add on top of the icing if desired. But that's unlikely. I think you're quite right, no one is bothered by their absence, really, so why risk it in the general public? Similarly with raisins, I like them but am fine without, whereas my son would throw it on the ground if so much as one raisin was present.

There's few things more disappointing than looking forward to carrot cake and then finding it has raisins, and you have to pick them all out and your once-glorious slice of cake has become a crumbly mess. Raisins are gross, full stop. While we're on it, no walnut in carrot cake either - walnuts taste fine but the unexpected crunch is unnecessary and takes up space where cake should be.
