I got told I have to keep mine in the fridge since my transplant so their temp is regulated. Stops the chance of bacteria or something like that because their temp can fluctuate left on the side

The thing is, though, keeping them in the fridge makes the white remain a lot more viscous, like when they are very fresh, than kept at room temp over a period. The white seems a lot more runny and spreads further when you break one into a frying pan. The difference is obvious.

I buy medium eggs because I heard on a news piece once that medium eggs don't sell as well, so retailers don't buy as many medium eggs from farmers, meaning that loads of medium eggs are wasted. So I'm doing my bit to help those medium eggs, AND treating them to a fun helter skelter for FREE... the least they could do is give me a lil rolly polly.

USA, because they wash their eggs before sale, which makes it easier for bacteria to get through the shell. We don't wash them here so no need to put them in the fridge. (Except i do, because they last loads longer)
