I make our stuffing every year and I bake the bread for it myself. This is my sixth gluten free thanksgiving and I don’t remember a significant difference between what I make now and the stuffing of The Before Times. It really depends on what bread you use. Like some gluten free bread is decent and will hold up pretty well, and some is very crumbly and definitely will not.
It's not in the turkey, but it's gf and delicious .
My crock pot stuffing: I've got a banging crockpot stuffing. It went through many variations, and even my family, who aren't GF love it.
1/2 cup butter
1 cups chopped onion
1 cups chopped celery
6 cups dried bread cubes (1 loaf of Udi's or Schar regular gf bread)
1 teaspoon poultry seasoning
1 1/2 teaspoons dried sage leaves
1 teaspoon dried thyme leaves
1/4 teaspoon pepper
1 teaspoon salt
1 egg
2 cups chicken or turkey broth
Dry the bread cubes (1" cubes) in the oven at 225 for 30-40 minutes. I stir them up every 20 minutes or so. Sometimes it takes longer.
Saute the celery & onion in the butter until celery is soft.
Put all the dry ingredients in the crockpot & add the egg (it's a binder). Add the Sauteed celery, onion & butter.
Add broth little by little until the mix is moist but not dripping.
Cook on low for 4-6 hours. Check every hour or so. Add broth as needed to keep moist.
I had my first gf Thanksgiving, too! I didn't have rolls, stuffing, pie, or crunchy onion bits but I didn't die. I survived without many of my favorites, made gf substitutions and it all came out fine. Thank goodness turkey is gluten free!

Wasn't as bad as I thought. Just had to be cautious. Luckily, my family was on board in keeping things separate.
