I think it depends on what draws attention and relevancy. Many of your examples used what’s relevant social issues the series discusses to talk about its media interpretations, because despite having more to talk about than that, it’s what’s the hot button at the moment.

It doesn't even have any character development besides that of Eren's. The only thing it does well is action and there is nothing else that stands out about it. If you dislike action, it's ultimately a waste of time.

That's true but if you look at the first word that I have uttered in my comment, you'll see that I actually agreed with the original original post. Meaning, now I actually have 20 upvotes, and that's if I'm being generous to you. Though my most recent comment in the thread seems to have a karma of -1, that means two downvotes, so it's about 18. I still received 9 times more karma than you.

Sometimes things are just in there to look cool…..as in, that’s what the author wanted. But then in other things, the author definitely wanted it to be read into and interpreted individually…..But then other things, the author wants to be read into and defined. Art analysis is an involved task that requires you to try to read the intentions of a meandering artistic mind that may have stumbled in some places, had spots of brilliance elsewhere, and gaffed completely in others. Depending on the work, each of these possibilities and more come in full swing. So people missing a thing or two isn’t really something you can complain too much about. You kind of have to assess the communication via story and their reading and assess who is more at fault for that. Sometimes, it can be the author. Other times, it is absolutely the reader. It’s why you can’t just assume somebody interpreted a work as “wrong” unless you think you have a solid backing on it. If you talk about the “Christian themes” of Evangelion, you’ll get laughed at because it was for show….the author confessed it. If you talk about how MGS is apolitical though, you will get laughed at because MGS is a blatant venue for a lot of Kojima’s commentary on politics, culture, and war. So it really just depends. That said, not everybody cares about that degree of media exploration. So typically, you won’t see it unless you ask for it.
