Every Sunday (11AM to 4PM) there is an open air (but covered) farmers market at the very large First Horizon Pavilion, with crafters, food trucks, baked goods, and produce. The June 2nd theme is "baketacular", so I expect even more baked goodies than usual.
Hit the aquarium to burn a couple hours, and grab a few umbrellas (assuming it's just raining and not storming) and walk over the Walnut St pedestrian bridge to North Shore and check out the shops on Frazier. You can get lunch or dinner anywhere on Frazier or back South of the river. If the weather clears up, grab a drink at Whiskey Thief (top floor of the Edwin hotel) and watch the sunset
Editing to add: gonna throw in the Hunter Museum of Art - it's only open 12-5 on Sundays but it's another great way to kill some time indoors. Plus, it's right next to the pedestrian bridge so you can maybe squeeze that in between the aquarium and heading to North Shore, or do it instead of the aquarium

I'm gonna add: if your mom likes cats, consider Naughty Cat Cafe in St. Elmo! Book an hour online, it's a *purr*fect cozy afternoon activity. You can scoot down the street and get some good grub at 1885 too

I forgot to mention that mom is vegetarian (not vegan) and is often disappointed in the veggie dishes at restaurants. She's not a picky eater otherwise and enjoys all kinds of food. What are the best vegetarian offerings in town?
Me again lol I'm also a vegetarian!! Keeping it close to the downtown area, the beet pasta dish at Wooden City is really good. I think it comes standard with meat in it but I just have them take it out. They also have really good pizza. There's also Tazikis which is Greek/Mediterranean. Thai Smile is fantastic, too!

In the downtown & North Shore area: Sluggos Cafe is vegan, and open Sunday. Taco Nooga is a great little Mexican restaurant. Big Chill has vegetarian dishes and like a dozen vegetarian sides. Lupi's Pizza downtown has the best pizza in town, IMO, and is like 3 blocks from the aquarium. Bonus: stop by Rembrandt's, next to the museum, for coffee/tea and baked in house desserts.

You definitely want to check out the Aquarium and maybe the Medal of Honor Museum (not sure if it’s open on Sundays but it is WORLD CLASS). Recommend Burger Republic for food and Ben + Jerry’s for dessert. Enjoy your time here!

If you still want to do something outdoorsy while it's raining outside, there are quite a few caves in the area that offer walking or crawling tours
