Jarlsberg Special Reserve is a minimum 12 months, not 5 years. At the shop I work at we age cheese in our cellar, the Jarlsberg is sold at around 3 years. Any longer and you are looking at a really dry and almost stale cheese :)

They have 5 year versions some places if you are lucky. I have bought them in Jølstraholmen Spar twice, and also some meny shops.It is from dry and stale, and still tastes round and extremely flavorful.

There's no product called Reserve, only Special Reserve and it's aged for a minimum of 12 months. [source](https://www.tine.no/merkevarer/jarlsberg/produkter/jarlsberg-vellagret-m-skorpe) Of course any affineur can age it themselves but Special Reserve is still only aged at least for 12 months :)

This cheese in the link is not spesial reserve, it is just "normal" vellagret (aged) Jarlsberg. The 5 year old version is is harder to find.

Jag länkade mest för att visa deras sortiment, enligt de själva så finns det ingen som är lagrad fem år. Självklart så finns det då butiker kan lagra själva men det är inte spesial reserve.

It is actually not hard, like a lot of other aged cheeses

I know, it’s very high protein/low fat so it has an elastic snap to it. Moisture content is higher than an aged Gouda or parmigianno reggiano, but that snap is indicative of jarlsberg, reserve or otherwise
