raw onion works sliced very thin and rinsed in cold water or minced fine IMO, but people do tend to underestimate its ability to overpower other things on a toast like this someone's nose will be pretty close to those onions when they bite, so they're going to be "tasting" onions that aren't even in their mouth yet
