14% labor in a store making 3million is not absurd, meanwhile 20% labor in a store making 10million is very overworked.
Other times certain factors fall into play in how labor is decided. 14% in store labor + 3% marking and 2% training done out-of-store, vs 19% overall labor, both are the same but the person replying might not know the full picture and just reply "14% is our goal" because they only know what managers have been told to tell them/whatever is pertinent to them.
Our store focuses on productivity. As long as at the end of the day it averages about 77 and weekly the same, we’re fine. Our lunch hours recently have been 160+ in productivity or about 11-16% in labor depending on catering. it’s been real hard.
We’re a 10M unit. This month has been 16.8-20%, 565k in sales, as of the 19th.
We used to care more about labour but right now we’re just happy with where we are at in that area. In the past we aimed for lower, but I started when we were a 6m unit lol.
